HARVEST PERIOD : Merlot: mid-September; sangiovese: mid-October
VINIFICATION PROCESS : The Sangiovese clusters are hand-picked into small boxes, then are de-stemmed and gently pressed, with the skins immediately removed to prevent any coloration.
The must ferments at 18oC in steel for about 10 days, the wine is then racked off, and about 8% Merlot added until the desired hue is obtained.
The final wine is then given a light, brief bentonite-based clarification and tartaric stabilisation, and is finally bottled.
SENSORY PROFILE : This wine obviously owes a significant part of its character to our famed Camerte red wine.
We style it to be a fascinating, easily-enjoyable summer quaffer that is perfect for casual summer enjoyment and convivial occasions with friends.
It displays an elegant suppleness, moderate alcohol, and a crisp acidity that allows holding, all qualities that make it the perfect partner to shellfish, raw sushi, and sautéed molluscs.
To fully savour its striking floral fragrances, it is best enjoyed in its youth.
